Eats! Time: Sweet & Sour Fish Fillet

Sharing with you my tried and tested Sweet & Sour Fish Fillet recipe, its very easy to do:

You will need:
250g fish fillet (sliced dory or hammour or tuna, whichever you prefer)
150g corn starch
80g tomatoes, cut and cubed
60g pineapple, cut and cubed
50g green bell pepper, cut and cubed
50g red bell pepper, cut and cubed
40g onion, cut and cubed
1/3 tsp salt
1/2 tsp sugar
half of chicken stock cube
5g spring onion (for ganish)
2 leaves of fresh coriander (for garnish)
Sweet and Sour Sauce:
2 Tbsp white vinegar
4 Tbsp sugar
6 Tbsp water
2 Tbsp tomato ketchup
1/2 tsp salt
1 tsp corn starch

Put the fish fillet in a bowl, add salt, sugar, chicken stock cube and marinate for 20 minutes, then coat with cornstarch. Next, heat a wok and add some oil, fry the fillet for 10 minutes until olden brown and crispy. Put aside on a plate. In the same wok, saute all ingredients for one minute and then add the sweet and sour sauce. Let boil for another minute. Pour the sweet and sour sauce on top of the fried fish and garnish with spring onions and coriander leaves.
